Turkey and Sweet Potato Freezer Burritos

I spent a long time reading about breakfast burritos in recent years but was convinced they wouldn’t be that nice. Even though there were so many recipes online and people talking about them, I just figured they wouldn’t reheat very well. However a few weeks ago I decided to try them out for the first time and made a small batch. From that point I was converted. I usually don’t refer to them as breakfast burritos as I don’t have them at breakfast. Instead they work as a fantastic post run meal in the evening and are really convenient when I get home and want something quick. I make two different types, sweet potato and turkey and make them in batches of 12. They last a few weeks depending on how often I have them. Make sure to mark them in the freezer so you know which flavour is which.

Ingredients

  • 300g Turkey Mince
  • 2 Medium Sweet Potatos
  • 2 Tins of Black Beans
  • 2 Bell Peppers
  • 1 Large Onion
  • 12 Eggs
  • 12 Wraps
  • Tinfoil for wrapping
  • Desired seasoning and spices, I tend to use
    • Smoked Paprika
    • Cayenne Pepper
    • Sriracha
    • Ground Coriander
    • Salt
    • Pepper

Cooking Instructions

  1. Turn on the oven to 180 degrees and put the two sweet potatos in when its heated up. The cooking time will depend on the size so keep an eye on them and use a knife to check if they are cooked through
  2. Meanwhile chop half the onion and one of the peppers and add to a pan with the turkey mince. Add these when the pan is cold and bring up to medium temperature. This gives the turkey a better consistency.
  3. Once the turkey has colour and the veg is starting to cook, add your desired spices and seasoning to the pan
  4. Drain one tin of beans and add to the pan. Cook this for 5-10 minutes until everything is cooked to the desired amount.
  5. While this is cooking make scrambled eggs with 6 of the eggs (or do all 12 together and split in half). I take 6 of the eggs and use a microwave for convenience. Make sure your eggs are not runny as that can ruin the wrap.
  6. Combine the eggs with the mixture from the pan and spoon into 6 of the wraps, wrap in the tinfoil and place in the freezer
  7. Chop the other pepper and half onion and put into the pan on medium/low.
  8. Add seasoning and the other tin of beans once the veg is cooked.
  9. Scramble the other 6 eggs.
  10. Take the sweet potatos out of the oven, cut them in half and scoop out the innards. Mix this with the eggs and the contents of the pan and make another 6 burritos.

Reheating Instructions

  1. Unwrap the burrito and place in microwave straight from the freezer.
  2. Give them 3/4 minutes in the microwave. You will need to judge based on your microwave settings.
  3. Add them to a hot frying pan just to give some colour to the wrap before eating.
