Chocolate and Peanut Butter Energy Balls

There are tonnes of recipes for energy balls out there so I’m not going into a big speech about why mine are the best. This is just the recipe that I made up based on researching plenty of sources and it works for me. I find myself making a batch most weeks as they are such a great snack. I avoid most chocolate and sweets but it doesn’t remove my need to have a snack during the day. These taste great and are quite filling so one or two usually is plenty for me. As with most of my cooking I don’t have exact measurements and tend to eyeball the ingredients. Some other energy ball ideas that I have made in the past are:

  1. Cranberry and Orange
  2. Carrot Cake (grated carrot, ginger and almonds)
  3. Coconut and Turmeric

Ingredients

  1. 227g Dates
  2. 70g Cashews
  3. 70g Whole Almonds
  4. Porridge Oats
  5. Peanut Butter
  6. Cocoa Powder
  7. Honey
  8. Salt

Steps

  1. Add the dates, cashews, almonds and porridge to a food processor. The porridge oats are most for filler to make more balls so its up to you how much you want
  2. Process for a few minutes until everything is chopped up a bit
  3. Add three heaped teaspoons of cocoa powder, two scoops of peanut butter, a sprinkle of salt and drizzle of honey to the food processor
  4. Blend for another few minutes until everything has been fully mixed through and is starting to come together
  5. Transfer to a bowl to form the balls. Take a handful of the mix and squeeze it until it sticks together and then roll into balls.
  6. Store in the fridge, usually makes approximately 20 balls.
